Discover the recipe for Splendido's signature cocktail, a Portofino Spritz – a fresh and fragrant mix that combines lemon with Liguria’s signature rose syrup and gin. The result? A spritz that mirrors the hues of a perfect Portofino sunset.
Aperitivo hour is sacred in Portofino’s Piazzetta. When the light from the setting sun casts a golden glow over the town, everyone seems to settle in for a spritz and a snack ahead of their evening meal. Personal preference dictates drink orders, and throughout the Piazzetta you’ll spot electric orange Aperol and bright red Campari spritzes being served alongside glasses of good Ligurian wine.
It’s here you’ll find Splendido Mare, A Belmond Hotel which was once a hall for the local fishermen to gather after bringing in their catch of the day. This spritz is designed to capture the romance of spending an aperitivo hour here in Portofino.
Ingredients
- 30ml gin
- 15ml rose liqueur
- 20ml rose syrup
- 15ml lemon juice
- 200ml sparkling lemon soda
- Fresh or dried rose petals, to finish
Instructions

Pour the gin, rose liqueur, rose syrup, and lemon juice into a cocktail shaker and shake well to combine.

Pour into a large spritz glass filled with ice and top with the lemon soda.
