Swissness Meets the Amalfi Coast

Experience an extraordinary "Chef's Exchange" as two culinary masters unite their passions and regions. Marco Ortolani, Executive Chef at La Réserve Eden au Lac Zurich, joins Armando Aristarco, Executive Chef at Caruso, A Belmond Hotel, Amalfi Coast, for an unforgettable gastronomic event.

The collaborative dinners will celebrate the union of Southern Italy's vibrant flavours and the wholesome ingredients of the Amalfi Coast's "Dieta Mediterranea" with the hearty, European-influenced cuisine of Switzerland. Prepare for a unique and memorable culinary experience.

The series begins on May 6 2025 with Marco Ortolani's exclusive guest appearance at Caruso, followed by the second instalment of the exchange in Zurich on 18 - 20 August.

"Swissness Meets the Amalfi Coast" is the result of this exciting partnership, a unique menu where Engadine lamb, squid carbonara, and other highlights from Ortolani’s kitchen blend seamlessly with the Mediterranean lightness of southern Italy.

Meet Armando Aristarco

Armando’s story at Hotel Caruso began in 2010 when he first started his career as the demi chef de partie of our Amalfi Coast restaurant. After settling in Milan, Rome, Bahrain, Singapore and Dubai, the chef is now back at the helm of Ristorante Belvedere, Amalfi Coast’s most distinguished terrace.
Native of the Campania region, Chef Armando Aristarco’s vision delves around traditional, locally-sourced ingredients. From our palace in the sky, indulge in his Dieta Mediterranea signature dishes and revel in Ravello food with a modern flair.

Lemon experience: Just a short ride from the centre of Amalfi, explore one of the region’s grandest lemon groves. Taste the fruits and learn how they are cultivated using traditional methods.

Colatura di alici experience: Discover the secrets of colatura di alici, the traditional anchovy sauce, in Cetara. This authentic experience includes a private visit to the family-owned Nettuno laboratory.

San Salvatore Farm: On the slopes of Vesuvius, visit the olive groves and vineyards of San Salvatore farm. Meet the buffalos whose milk is used to produce mozzarella and the housewives busy preparing homemade pasta and cakes.
