A Story in Every Bite

The menu is a curious feast of creativity. Ingredients come from the Tyrrhenian Sea and the rich Tuscan countryside. They are always local and carefully selected from sustainable farms nearby.

Expect a gentle nod to Florentine traditions. Take the Egg Yolk Fagottino pasta, for example. Lovingly prepared fagottini brimming with braised beef peposo, ricotta cheese, Chianina IGP beef tartar and fresh seasonal truffle. The starring peposo has been a local favourite since the 14th century.

The Scarpaccia is a vegan reinterpretation of a classic dish from Camaiore in Versilia. While the risotto with roasted peppers, Cacio Mugellano cheese, Casentino Grigio pork sausage and wild fennel is a childhood favourite of Chef Alessandro’s—reinvented with a Tuscan twist.

    I enjoy bringing my passionate vision into the kitchen and endeavour to make every element of each dish intriguing and original.

    Originally from Caserta in southern Italy, Alessandro Cozzolino trained internationally with Michelin-starred chefs. From his experiences in Hong Kong and beyond, he has relied on two qualities: passion and dedication. Combining his intuition with personal taste and well-honed skills, the result is a careful curation of dishes that wow on every mouthful.
