Named after an endangered Andean root from pre-Columbian Peru, Mauka is one of the best restaurants in Cusco – promoting the preservation, cultivation and consumption of Andean ingredients.

The varied landscapes of the Andean region include fertile lagoons, forests and deep valleys, many of which are home to unique ingredients on the brink of extinction. Alongside the communities of the Sacred Valley, Mauka seeks to preserve these crops by bringing them to the forefront of fine dining.

The restaurant is led by chef Pía León, who is dedicated to raising awareness of hyper-local ingredients. Her other restaurants, Central and Kjolle in Lima, frequently feature on the World’s 50 Best list; the same organization named her the World’s Best Female Chef in 2021.
