Explore the ocean’s richness through dynamic tasting menus that celebrate the diverse flavours of marine life. Our Cape Town restaurant celebrates the shared flavours of Cape Town and Cádiz, highlighting sustainably sourced seafood, seasonal produce and indigenous spices.
Dishes include yellowfin tuna tartare with cured egg yolk, smoked Cape salmon with buttermilk sauce, plankton risotto with squid and a raw fish ‘charcuterie’ trolley served tableside.

Chef Ángel León, Spain’s renowned “Chef of the Sea,” is a visionary who transforms overlooked marine elements into extraordinary cuisine. Founder of the Michelin-starred Aponiente and Alevante, he blends science, sustainability and gastronomy to reveal the ocean’s hidden potential.
A sailor and researcher at heart, León champions biodiversity and responsible sourcing. His debut in Africa brings his pioneering marine philosophy to Amura, offering a bold, immersive taste of the ocean.
Interiors
Designed by award-winning interior architect Tristan du Plessis, Amura is a cinematic, ocean-inspired space that evokes the mystery of Cape Town’s kelp forests. Set within Mount Nelson’s historic Planet Room and former Cape Colony Restaurant, its moody greens, warm timber and bronze details create a tranquil, transportive atmosphere.
An open kitchen forms the restaurant’s theatrical heart, where Chef Ángel León’s pioneering marine cuisine meets local ingredients and cutting-edge technique, offering guests an immersive sensory journey shaped by the majesty of the sea.
