With a central location beside Hotel Cipriani’s legendary pool, Bar Gabbiano is the place to rendezvous throughout the day. The bar counter is a famed spot to trade tales over a Bellini, while live music sets a soundtrack into the night, with an unmissable DJ set every Saturday evening.
Our most popularly ordered cocktail is the Bellini, created by Giuseppe Cipriani, the founder of the hotel, back in 1948. It pays homage to the painter Giovanni Bellini, who had an exhibition at the Doge's Palace at that time. Cipriani was inspired by the pink colour of Bellini's paintings, which resembled the colour of a peach. The recipe has remained unchanged since then, and to this day, it is the most requested cocktail at the Gabbiano Bar. It is only served in season using fresh and ripe white peaches.
