The menu is a reinvention of traditional Mexican dishes: think seafood caught locally in the morning and served to you the same afternoon and decadently rich chocolate cake made with Oaxacan black mole. At breakfast, feast on traditional tacos and quesadillas, hand prepared to each order by Maroma’s La Tia, Olivia. Tableside preparation adds a theatrical twist, with dishes served in stunning, hand-crafted Mexican ceramics.

Across all our kitchens, we are dedicated to sustainably sourcing produce and ingredients for our kitchens, with 90% of everything used sourced from Mexico and over half from the Yucatán peninsula.
