Arnaud Donckele’s culinary journey is one shaped by heritage and emotion. Raised in Normandy, his passion for cooking was ignited in the family vegetable garden and on nearby farms, an early connection to the land that continues to inspire his work today as a chef and culinary storyteller. His classical training under some of France’s most revered culinary figures laid the foundation for his exacting technique and uncompromising standards; today, he holds three Michelin stars at both Plénitude in Paris and La Vague d’Or in Saint-Tropez, a rare distinction that underscores his exceptional talent.
Celebrated for his ultra-modern reinterpretation of classical French gastronomy, Donckele creates menus that unfold as emotional narratives – often accompanied by handwritten notes that invite guests into a deeply personal experience. At Le Manoir aux Quat’Saisons, this storytelling approach will usher in a transformative era, introducing new culinary concepts that deeply honour nature and craftsmanship.
